Cut Potatoes about ¼ inch thick and crosshatch with skewers and a knife
Cut into 4 pieces and add to cold water to draw out the starch (makes it crispy)
Spray Chosen Foods Avocado Oil on a sheet pan and place down potatoes
Melt Butter and add cajon seasoning to paint the bricks red
Add to smoker or oven at 425°F for 30 minutes or until crispy
Top with Sauce, Parmesan, and Chives
