Greek-style Tuna Fritters
  1. Combine drained tuna, finely diced red onion, crumbled feta, capers, almond meal or breadcrumbs, tapioca flour, eggs, chopped parsley, dried oregano, sliced spring onion, and lemon zest in a bowl

  2. Mix until well combined

  3. Form mixture into fritters and cook in a pan, bake in the oven, or shape into muffins and bake

  4. Prepare tzatziki by combining Greek yoghurt, grated and squeezed cucumber, and a squeeze of lemon

  5. Serve fritters hot or cold with tzatziki sauce
