Combine drained tuna, finely diced red onion, crumbled feta, capers, almond meal or breadcrumbs, tapioca flour, eggs, chopped parsley, dried oregano, sliced spring onion, and lemon zest in a bowl
Mix until well combined
Form mixture into fritters and cook in a pan, bake in the oven, or shape into muffins and bake
Prepare tzatziki by combining Greek yoghurt, grated and squeezed cucumber, and a squeeze of lemon
Serve fritters hot or cold with tzatziki sauce
