Cottage Cheese Chocolate Mousse {high Protein}
  1. Pour the chocolate chips into a small microwave-safe dish and microwave in 20-30 second increments, stirring in between each interval, until it is fully melted.

  2. Next, to a small food processor or high-speed blender, add the cottage cheese, melted chocolate, honey, cocoa powder, and vanilla extract. Blend on high for 20-30 seconds. Use a spatula to scrape down the sides of the food processor or blender and then blend again until smooth. If the mixture is too thick to blend, add a tablespoon or two of milk and blend again until smooth. If it’s still grainy, continue blending until creamy.

  3. Divide the mixture into smaller individual bowls or glasses. Place in the fridge for at least an hour to allow it to firm up slightly. The longer it sits in the fridge, the thicker and more mousse-like it will become.

  4. Serve it with a dollop of whipped cream and/or chocolate shavings and your favorite fruit, if desired. Enjoy!
