Chicken Lentil Curry
  1. Get your prep done before you start cooking: Season the chicken thighs with salt, pepper, paprika and garlic powder.

  2. Grate the ginger, mince the garlic cloves and dice the onions.

  3. Heat oil and butter over medium high, add chicken thighs. Sear for 5 minutes per side. Remove onto a clean plate.

  4. Reduce heat to medium. Add garlic, ginger and onions. Sauté for 3 minutes. Add rinsed lentils, stir to combine. Pour in broth and coconut milk, bring to a boil.

  5. Add garam masala, chickpeas and lime juice. Simmer for 10 minutes over low.

  6. Return chicken thighs to the skillet and simmer for 10 minutes more or until the lentils are tender and the chicken is cooked through.

  7. Top with chili flakes, freshly ground black pepper and cilantro. Enjoy!
