Garlic Mayonnaise
  1. Gently cook the garlic in the oil with herbs for 45 mins, ideally around 80c. Strain off the oil and set aside to cook then remove the herbs their work here is done.

  2. Crush the garlic cloves and set to one side

  3. Add the egg yolks, mustard, lemon and miso or salt to a bowl and whisk. Stream in the garlic oil and whisk constantly until a mayonnaise forms

  4. Add the garlic, parsley and chives. Season to taste with salt and lemon juice

  5. Eat mayonnaise and be happy
