Preheat oven to 375°F.
Place the garlic cloves in a small baking dish and drizzle with 1 tablespoon of the olive oil. Roast for 15-20 minutes until softened.
In a large oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Season the chicken pieces with salt and pepper and add them to the skillet, skin-side down. Cook for 5-6 minutes until the skin is crispy.
Flip the chicken and add the roasted garlic, wine, broth, and thyme. Transfer the skillet to the oven and bake for 30-35 minutes, until the chicken is cooked through.
Remove the chicken from the oven and let it rest for 5 minutes. Serve the chicken with the garlic sauce spooned over the top.
