Preheat oven to 325°F and line a baking sheet with parchment.
In a blender, blend egg whites, honey, vanilla, almond extract & salt until frothy (30-60 seconds).
To a bowl, add shredded coconut and wet mixture then mix together until fully combined.
Shape mixture into 12 balls and place on the baking sheet.
Bake for 20–25 minutes until golden brown.
Optional: Melt chocolate chips and drizzle once cooled.
