Fiery Noodles

For the Sauce

  1. Cook the noodles according to packet instructions. Drain and run under cold water to halt the cooking process. Set aside while you cook the vegetables and make the sauce.

  2. Drizzle the oil in a large frying pan over medium heat and add the mushrooms; fry for 5 minutes until soft and golden. Add the pak choi and fry for a further 2 minutes, until slightly softened

  3. Meanwhile, mix together all of the sauce ingredients.

  4. Pour the sauce into the pan with the vegetables, over medium heat, and mix until everything is coated; add the udon noodles. Fry until everything is heated through and coated in a thick glossy sauce — add a splash more water if the sauce is too thick.

  5. Mix in the edamame and spring onions. Serve topped with a sprinkle of red chilli (if using), sesame seeds and a little extra chilli oil, if you like.
