Boil pasta.
While the pasta is boiling, add egg yolks to a large bowl.
Add grated Parmesan cheese, garlic powder, and mustard powder to the bowl, and whisk until combined.
Add some pasta water to the bowl and whisk until a smooth sauce forms.
Taste and adjust the sauce as needed.
Drain the cooked pasta, reserving some cooking water.
Return the pasta to the pot and toss in the warm sauce.
Season to taste with kosher salt and serve.
