Doc Chey’s Chicken Lettuce Wraps
  1. Heat a wok or skillet. When hot, add oil then quickly add carrots, scallions, edamame and water chestnuts.

  2. Stir and cook until carrot softens slightly, about 2 minutes.

  3. Add chicken and bean sauce and continue to cook until ingredients are hot, about 30 seconds.

  4. Serve on napa cabbage or iceberg lettuce leaves.
