Cook the sticky rice according to package directions
Dice chicken breast into popcorn-sized pieces
Mix diced chicken with 1 tbsp soy sauce, salt, pepper, and egg
Coat chicken mixture with cornflour
Air fry at 200C for 10-12 minutes (or oven bake at 220C for 15-18 minutes), flipping halfway through
Prepare sweet chilli glaze by mixing sweet chilli sauce, light soy sauce, water, minced garlic, minced ginger, rice vinegar, and lime juice
Toss cooked chicken through the glaze
Mix cooked rice with 3 tbsp rice vinegar, sweetener, and salt to taste
Build bowls with sticky rice and glazed chicken
Garnish with sesame seeds and green onions
Serve with optional sliced cucumber mixed with soy sauce
