In a large pot over medium heat, add the sausage, thyme, red pepper flakes, italian seasoning and turmeric. Break down the sausage into tiny pieces and is half way cooked through.
Next, add the stelline/orzo pasta and toast the pasta for 1-2 minutes until it turns a golden color, then add the garlic, butternut squash, and chicken broth.
Bring to a gentle boil, then cover, and let cook for 10 minutes or until the butternut squash is cooked.
Remove the pot from heat. Add the spinach and mix until the spinach has wilted, then add the heavy cream/coconut milk.
Stir until incorporated and finally, add the parmesan cheese. Mix again, then taste and add salt and pepper as desired.
