Preheat your airfryer to 200°C (fan).
Drain your tinned sweetcorn well, then spread it out on a baking tray. Give it a little drizzle of oil and roast for around 15 minutes, turning halfway. Let it cool for a few minutes once it's out of the oven.
Once the corn is slightly cooler add to a bowl with the spring onions, gherkins, sauerkraut, parsley, tofu and seasonings, mix well until the tofu breaks down and starts to bind everything together.
Add in the chickpea flour and a good amount of salt and pepper and once mixed in, add a little gherkin brine to loosen the mixture slightly.
Turn your air fryer down to 190c. Scoop out the mixture and shape into small fritters (mix should make 7 or 8), drizzle with oil then place in your air fryer for about 15 minutes, flipping halfway, until they're golden, crisped on the outside, and holding together nicely.
Let them sit for a few minutes before serving, they'll firm up slightly as they cool.
