Charred Corn & Pickle Fritters
  1. Preheat your airfryer to 200°C (fan).

  2. Drain your tinned sweetcorn well, then spread it out on a baking tray. Give it a little drizzle of oil and roast for around 15 minutes, turning halfway. Let it cool for a few minutes once it's out of the oven.

  3. Once the corn is slightly cooler add to a bowl with the spring onions, gherkins, sauerkraut, parsley, tofu and seasonings, mix well until the tofu breaks down and starts to bind everything together.

  4. Add in the chickpea flour and a good amount of salt and pepper and once mixed in, add a little gherkin brine to loosen the mixture slightly.

  5. Turn your air fryer down to 190c. Scoop out the mixture and shape into small fritters (mix should make 7 or 8), drizzle with oil then place in your air fryer for about 15 minutes, flipping halfway, until they're golden, crisped on the outside, and holding together nicely.

  6. Let them sit for a few minutes before serving, they'll firm up slightly as they cool.
