In a bowl, mix the marinade ingredients: soy sauce, lime juice, maple syrup, Siracha, turmeric, and smoked paprika
Add the pressed tofu cubes or strips and toss to coat
Marinate for at least 20 minutes, or up to 1 hour for more flavour
Preheat an air fryer to 180°C and cook the tofu for approximately 11 minutes until golden and crisp, or alternatively grill or pan-fry in sesame oil until golden on all sides
In a small pan, combine the peanut sauce ingredients: peanut butter, garlic, soy sauce, maple syrup, ginger, Siracha, lime juice, and water
Gently heat the sauce, stirring until smooth and creamy, adding a splash of water if too thick
Serve the crispy tofu with steamed rice and peanut sauce
Garnish with toasted sesame seeds, chopped coriander, crushed peanuts, and red chilli slices
