    Instructions

  1. mix batter into crumbs.

  2. Add egg yolk.

  3. Knead the dough.

  4. Spread most of it into a 20cm (8 in) diameter deep springform pan lined with parchment paper.

  5. Put a small portion in the fridge.

  6. Cook custard until thickened, add mascarpone, let cool

  7. Beat egg whites to stiff peaks.

  8. Fold egg whites into yogurt.

  9. Build the cake: first add cooled custard, add topping.

  10. Add remaining dough in thin pieces over top of cake.

  11. Bake at 180°C (350°F) for 40 minutes.

For a 20 cm (8'') cake pan, multiply all ingredients by 1.23

For a 22 cm (9'') cake pan, multiply all ingredients by 1.49

For a 24 cm (10'') cake pan, multiply all ingredients by 1.78
