Cinnamon Roll Cheesecake

  1. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Set aside.

  2. Make the cinnamon filling: Combine melted butter, brown sugar, and cinnamon. Mix well and set aside.

  3. Make the cheesecake filling: Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour half of the cheesecake mixture over the crust, add half of the cinnamon filling, then repeat layers.

  4. Bake at 325°F (163°C) for 60 minutes. Turn off the oven, let the cheesecake sit in the oven for another hour.

  5. Chill overnight before serving.
