Spicy Sesame Chicken Salad pang
  1. Bring a pot of water to a boil with spring onions, ginger, and salt. Add the chicken and simmer for 10–12 mins. Transfer to an ice bath to stop cooking, then shred.

  2. Mix all the bang bang Sauce ingredients in a bowl or bender until smooth. Add a little water to loosen if needed. Taste and adjust seasoning as desired.

  3. Layer cucumber and tomatoes on a plate, top with shredded chicken, and drizzle over a generous amount of the bang bang sauce. Drizzle over a little more chilli oil and top with coriander and sesame seeds.

  4. Tip: Let the chicken soak in the poaching liquid off the heat for extra juiciness!
