Press the tofu
Slice the tofu into two steaks
Slice the tofu at 2-3 millimeter intervals using chopsticks to prevent the knife from going all the way through
Combine teriyaki, soy sauce, maple syrup, lime zest, lime juice and ginger for the sauce
Add most of the sauce to the tofu, saving some for topping, and push the sauce into the grooves
Prepare the toppings
Plate up and enjoy
