Lemon Pudding
  1. Preheat the oven to 190 degrees Celcius and grease a 20 x 30cm baking dish.

  2. Place butter, sugar, milk, lemon zest, flour and egg yolks in a bowl and whisk until smooth.

  3. Using an electric mixer, whisk egg whites until stiff peaks form.

  4. Gently fold your egg whites into your lemon mixture until combined.

  5. Pour batter into baking dish, and sprinkle with your remaining caster sugar. Mix together lemon juice and boiling water, and pour on top.

  6. Bake for 30-35 minutes, or until golden.

  7. Dust with icing sugar, and serve with vanill ice cream and/or cream.
