Illinois Giardiniera Hummus
  1. In a food processor, combine chickpeas, 1 cup giardiniera, tahini, lemon juice, giardiniera oil, water, and ½ cup feta until smooth. Adding more water until smooth consistency is formed. Season with salt and pepper

  2. Finish hummus with more chopped giardiniera on top and crumbled feta. Refrigerate overnight for best taste. Enjoy with pita bread.
