Preheat oven to 400°F
Mix ground beef, parsley, lemon zest, onion powder, garlic powder, kosher salt, black pepper, cumin, smoked paprika, coriander, cinnamon, olive oil, and honey gently until just combined
Press mixture onto a sheet pan to about ¾ inch thick
Score into kebab portions
Bake for 12–14 minutes until just cooked through
Spoon off excess fat
Slide parchment out
Broil for 2–3 minutes until browned
For yogurt sauce: mix greek yogurt, lemon juice, olive oil, honey, salt, pepper, and dill
Build pitas by layering yogurt sauce, beef, tomato and cucumber with salt and olive oil, pickled red onion, and chili oil
