In a small mixing bowl, combine zaatar and olive oil until it becomes a paste.
Lay one sheet of puff pastry on a non-stick surface and brush zaatar paste onto it, ensuring the edges are covered too.
Roll the puff pastry sheet into a log and then cut at 2cm (just under an inch) intervals. Place onto a lined baking sheet tray and then use the bottom of a cup to flatten out into thinner discs. Repeat step 2 & 3 with the other sheet.
Bake in a preheated fan forced oven 200C (390F) for 14 minutes or until pastry is golden brown. Transfer to a cooler rack. Enjoy warm or cool.
