Taco'd Spaghetti Squash
  1. Roast the spaghetti squash at 425 for approximately 35 -40 mins.

  2. For the filling, cook the ground turkey in extra virgin olive oil with sea salt, onion, garlic, red bell pepper, and jalapeño.

  3. Add the taco seasoning, enchilada or taco sauce, and ½ cup of grated sharp cheddar cheese to the filling mixture.

  4. Place the roasted spaghetti squash halves back into a 425 degree oven until the cheese is nicely melted.

  5. Finish with sliced jalapeño, chopped tomato and cilantro.
