Banana Oatmeal Muffins
  1. Preheat oven to 350°F (175°C) and grease a muffin tin or line with paper liners.

  2. In a large bowl, mix together mashed bananas, honey or maple syrup, applesauce, milk, egg, and vanilla extract.

  3. Add oats, cinnamon, baking powder, baking soda, and salt to the wet ingredients, and mix until well combined.

  4. Divide the batter evenly into the muffin tin, filling each cup about ¾ full.

  5. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  6. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
