Soak glass noodles in hot water
Thinly slice onion, leek, and carrots
Pat the beef dry with paper towels
Cut beef into bite size pieces if needed
Mix the beef with all the marinade ingredients until evenly coated
Add onion, leek, soaked glass noodles, and water to the pot
Bring to a boil and gently separate the beef so it doesn't clump
Simmer for about 5-8 more minutes, until the beef is cooked and the noodles are tender
