Homemade Marshmallows
  1. Bloom the gelatin/agar

  2. Combine the ingredients for the syrup

  3. Bring the sugar syrup to a boil

  4. Boil the syrup to 247°F to 250°F

  5. Whisk the hot syrup into the gelatin / agar

  6. Increase speed and continue beating

  7. Beat marshmallows until thick and glossy

  8. Immediately transfer to the baking pan

  9. Let the marshmallows set for 6 to 24 hours

  10. Prepare the marshmallow coating

  11. Remove the marshmallows from the pan

  12. Cut the marshmallows

  13. Coat each square with powdered sugar mix

  14. Store the marshmallows
