Bloom the gelatin/agar
Combine the ingredients for the syrup
Bring the sugar syrup to a boil
Boil the syrup to 247°F to 250°F
Whisk the hot syrup into the gelatin / agar
Increase speed and continue beating
Beat marshmallows until thick and glossy
Immediately transfer to the baking pan
Let the marshmallows set for 6 to 24 hours
Prepare the marshmallow coating
Remove the marshmallows from the pan
Cut the marshmallows
Coat each square with powdered sugar mix
Store the marshmallows
