Fluffy Cottage Cheese Cloud Bread
  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper and lightly grease it.

  2. In a clean mixing bowl, add the egg whites and cream of tartar. Using an electric mixer, beat until stiff peaks form.

  3. In another bowl, combine the egg yolks, blended cottage cheese, salt, and cornstarch (if using). Whisk until smooth and well combined.

  4. Gently fold the whipped egg whites into the cottage cheese mixture using a spatula.

  5. Scoop the mixture onto the prepared baking sheet, forming small rounds or bun-sized portions. Bake for 20-25 minutes, or until golden brown and firm to the touch.

  6. Let the cloud bread cool for a few minutes before removing from the baking sheet.
