Tip the risen dough onto a floured surface and cut to desired size.
Place the dough pieces on a floured tray and cover for 45 minutes.
Preheat the oven to 240C/465F with a tray of water at the bottom.
Bake for 10 minutes, then remove the water tray.
Continue baking for another 12 minutes or so, or until golden brown. Bake on the bottom rack so the base of the bread browns up.
