Kale Apple Salad
  1. Thinly slice 3-4 shallots

  2. Barely cover shallots with oil (about ⅓ cup) in a small bowl

  3. Microwave for 5-6 minutes until shallots start to shrink and turn golden

  4. Continue microwaving in 15-second intervals, watching carefully as they brown quickly

  5. Remove from oil when lightly golden and drain on paper towels

  6. Combine finely shredded brussels sprouts, finely shredded kale, and chopped apples in a bowl

  7. Add cheese of choice to the salad

  8. Top with fried shallots and seasoned nuts

  9. Dress with crisp apple maple dressing or homemade maple balsamic vinaigrette
