Step 1: Preheat & Prep
Start by preheating your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray to prevent sticking.
Step 2: Cook the Sweet Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften. Remove them from the skillet and set them aside.
Step 3: Cook the Turkey Mixture
In the same skillet, add the ground turkey and cook until browned, breaking it apart with a spoon. This should take about 5 minutes. Once the turkey is cooked through, add the onion, bell pepper, and garlic. Cook for another 3-4 minutes, until the vegetables are softened and fragrant.
Step 4: Add Seasonings & Spinach
Stir in the diced tomatoes, paprika, cumin, oregano, salt, and black pepper. Let everything simmer for a couple of minutes to allow the flavors to meld together. Then, add the chopped spinach and stir until wilted.
Step 5: Assemble the Casserole
In your greased baking dish, spread half of the cooked sweet potatoes as the bottom layer. Pour the turkey mixture on top, spreading it evenly. Then, add the remaining sweet potatoes over the turkey layer.
Step 6: Bake & Add Cheese
Cover the dish with foil and bake for 20 minutes. After that, remove the foil, sprinkle shredded mozzarella cheese evenly over the top, and return it to the oven. Bake uncovered for another 10 minutes, or until the cheese is melted and bubbly.
Step 7: Serve & Enjoy!
Let the casserole cool for a few minutes before serving. Scoop out a generous portion and enjoy the perfect blend of savory turkey, sweet potatoes, and cheesy goodness!
