Peel the sweet potatoes and cut them into chunks.
Boil in a pot of salted water until tender, about 15-20 minutes.
Drain and let cool slightly.
In a bowl, mash the sweet potatoes until smooth. You should have about 1 ½ cups of mashed sweet potatoes.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine the mashed sweet potatoes, oil, and honey (if using).
Gradually mix in the rice flour until well combined. You should have a thick dough-like consistency.
Add salt and any optional spices (cinnamon, nutmeg) if desired, and mix well.
Transfer the dough onto the prepared baking sheet and shape it into a baguette-like loaf. Smooth out the surface with a spatula.
Bake for 30-35 minutes, or until the top is golden brown and the loaf is firm to the touch.
Let the loaf cool on a wire rack before slicing. It can be enjoyed warm or at room temperature.
