Soak wooden skewers in water for at least an hour
Cut chicken thighs into pieces suitable for threading onto skewers
Mix onion granules, paprika, fresh thyme, garlic powder, black pepper, salt, and chilli flakes together
Coat chicken pieces with the spice mixture and olive oil
Thread seasoned chicken onto soaked skewers
Air fry at 200°C for 8 minutes, turn skewers, and cook for another 8 minutes
Alternatively, cook in a conventional oven at 200°C or on a grill, watching carefully until cooked through
While chicken rests, prepare butter dressing by melting butter in a saucepan
Add grated fresh garlic to melted butter and warm gently without burning
Stir in chopped parsley and honey
Paint the warm garlic honey butter dressing over the resting chicken skewers
Add chilli to the melted butter if you prefer extra heat
