Filo Fish Pie
  1. Add a tsp olive oil to the pan along with your butter over a medium-low heat until foaming

  2. Add your leeks and fry for 2 minutes, then add your garlic and fry for a further 1 minute stirring occasionally

  3. Add your flour and stir, cooking it off until there’s not dry bits

  4. Add your milk and stir through. Leave to simmer for a few minutes

  5. Go in with your dill, chives, fish, mustard, salt, pepper and spinach and stir through until combined and the spinach has wilted

  6. Turn off the heat and sprinkle 80g of your cheese over the top, then tear up your filo pastry and cover the top with that, can be as messy as you like

  7. Tuck the edges with a spatula then sprinkle some more cheese on top and spray with olive oil (or drizzle if you don’t have the spray)

  8. Get it in the oven for 25 minutes at 190oC

  9. Garnish up with your chives and enjoy!
