To a large skillet add 12 ounces of bacon chopped and cook on low to medium heat. Once cooked through and crispy remove from pan leaving the bacon grease in there.
Now take two large chicken breasts and slice in half making 4 thin large chicken breasts. Season well however you’d like.
Add that chicken to the pan with the bacon grease. Cook at a medium to high heat for 3 ½ minutes on both sides then remove from the pan.
There should be a bit of bacon grease left in that pan. (if not add a bit of oil or butter) Then add 1 pound of orzo. Toss in the bacon grease for about 2-3 minutes.
Now add 4 cups of low sodium chicken broth. Heat to a boil. Add some more of the same seasonings as before. Toss around every couple of minutes. Until cooked through and liquid has been absorbed. Should be around 8 minutes.
Turn down heat and add a ½ cup of heavy cream. Mix then add 1 cup of cheddar cheese mix again and add another cup of cheese. Stir until melted.
Now top with your bacon then your chicken sliced thinly. Sprinkle with sliced green onions.
