Preheat the oven to 190 degrees.
Using a peeler, cut the carrots into tagliatelle.
Arrange the carrot tagliatelle on a baking tray, sprinkle with Parmesan and smoked paprika and drizzle with olive oil.
Place in the oven and bake for approximately 20 minutes.
For the sauce, mix the St Morêt, Greek yoghurt, lemon zest and juice, oils, white vinegar, soy and honey.
Serve the grilled carrot tagliatelle with the lemon sauce.
