Coconut Poke Cake
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch pan with spray oil. Create handles by laying two strips of parchment paper across the pan in opposite directions, allowing them to extend up the sides.

  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.

  3. In a large mixing bowl, beat the softened butter for about 30 seconds. Then, add the granulated sugar and continue beating for 4 to 5 minutes until the mixture is light and fluffy.

  4. Incorporate the neutral oil and mix for another minute. Add the eggs one at a time, ensuring to mix well after each addition. Along with the last egg, add the vanilla and coconut extracts.

  5. Stir in the sour cream, then add one third of the dry ingredient mixture and mix on low speed until combined. Follow this with half of the coconut milk and mix again.

  6. Add another third of the dry ingredients, mixing just until incorporated. Pour in the remaining coconut milk and mix, then add the last of the flour mixture and stir until combined. Finally, fold in the shredded coconut.

  7. Pour the batter into the prepared pan and spread it evenly. Bake for approximately 32 to 38 minutes, or until the center springs back lightly and a toothpick inserted comes out with a few moist crumbs.

  8. Once the cake has cooled for about 30 minutes, poke holes all over the surface using a skewer or fork. In a separate bowl, whisk together the sweetened condensed milk and coconut milk until smooth.

  9. Slowly pour the milk mixture evenly over the cake, allowing it to absorb before adding more. Use a pastry brush to help spread the soak evenly. Cover the cake with plastic wrap and refrigerate for at least a few hours, preferably overnight.

  10. To prepare the frosting, beat the softened butter for 30 seconds, then add the cream cheese and beat until smooth. Gradually add the powdered sugar and mix until incorporated. Stir in the coconut milk, vanilla, and coconut extract until combined.

  11. In another bowl, whip the heavy cream to stiff peaks using an electric mixer on medium-high speed. Be careful not to over whip it. Fold half of the whipped cream into the cream cheese mixture until combined, then fold in the remaining whipped cream until the frosting is light and fluffy.

  12. Spread the frosting over the chilled cake and generously top with shredded coconut. Chill for at least 30 minutes before slicing.
