Asian-Inspired Baked Salmon with Roasted Vegetables
Ingredients:
Preheat Oven: Set oven to 400°F.
Prepare Vegetables: Place carrots, zucchinis, and cherry tomatoes in a large baking dish. Drizzle with sesame oil and sprinkle with soy sauce, ginger, garlic powder, and sesame seeds. Toss to coat.
Bake Vegetables: Bake for 25 minutes, then stir and continue baking for another 10 minutes.
Prepare Salmon: Season salmon fillets with salt, pepper, and a sprinkle of sesame seeds. Drizzle with a bit of sesame oil.
Bake Salmon: Place salmon on a separate baking sheet lined with parchment paper. Bake in the oven for about 12-15 minutes or until cooked through.
Glaze Salmon (Optional): While the salmon is baking, prepare a glaze by whisking together 1 tablespoon soy sauce, 1 tablespoon honey, and 1 teaspoon grated ginger. Brush this glaze over the salmon during the last 2 minutes of baking for an extra layer of flavor.
Serve: Serve salmon with roasted vegetables and garnish with chopped green onions if desired.
