Castella Cake (the Cake That Jiggles)
  1. Separate 7 eggs into yolks and whites

  2. Whisk together egg yolks, ½ cup oil, ½ cup milk juice, vanilla or almond extract, and 1 cup cake flour until combined

  3. Beat egg whites with ½ cup sugar and a pinch of salt until soft peaks form

  4. Fold egg white mixture into yolk mixture

  5. Pour batter into a 9-inch square pan lined with parchment paper

  6. Place pan in a preheated water bath

  7. Bake at 300°F for approximately 1 hour

  8. Check doneness with a toothpick
