Separate 7 eggs into yolks and whites
Whisk together egg yolks, ½ cup oil, ½ cup milk juice, vanilla or almond extract, and 1 cup cake flour until combined
Beat egg whites with ½ cup sugar and a pinch of salt until soft peaks form
Fold egg white mixture into yolk mixture
Pour batter into a 9-inch square pan lined with parchment paper
Place pan in a preheated water bath
Bake at 300°F for approximately 1 hour
Check doneness with a toothpick
