Creamy Smothered Chicken with Spinach, Potatoes & Mushrooms

Season the chicken with garlic powder, paprika, salt, and pepper.

Heat the olive oil in a large skillet over medium heat. Sear the chicken on both sides for 4-5 minutes, until golden brown. Remove the chicken from the skillet and set it aside.

In the same skillet, melt the butter. Add the minced garlic and sliced mushrooms, and cook for 2-3 minutes until the mushrooms soften.

Stir in the chicken broth, heavy cream, and Dijon mustard. Let the sauce simmer for 3-4 minutes, allowing it to slightly thicken.

Add the boiled baby potatoes and chopped spinach to the skillet. Stir to coat everything in the sauce. Return the chicken to the skillet, spooning the sauce over the chicken. Simmer for 8-10 minutes, or until the chicken is fully cooked through.

Garnish with fresh parsley and serve warm with crusty bread or a side salad.
