Slice shallots thinly and slice green onions
Grate in ginger and garlic
Add red curry paste, ginger, garlic, and sugar to the pan. Saite lightly.
Combine stock and coconut milk in a pot. Add contents of saute pan.
Bring to a simmer and cook until flavors combine
Add shallots and green onions
Finish with lime juice and cilantro
Serve in bowl with boiled or steamed dumplings.
