Set oven to 375°F (190°C). Line a baking sheet with parchment paper or grease lightly.
Press tomatoes between paper towels to remove excess moisture.
Combine sausage, cream cheese, drained Rotel, cheddar cheese, Bisquick, and seasonings in a large bowl. Mix until thick and sticky.
Scoop 1 to 1½ tablespoons of dough, roll into balls, and place on the baking sheet.
Cook for 20–25 minutes or until golden brown and cooked through.
Let cool 5 minutes and serve warm with ranch, honey mustard, or spicy aioli.
