Peel and chop the potatoes, then boil until soft (about 10-15 minutes). Drain well and mash until smooth.
While still warm, mix in the flour, salt, pepper, and baking powder.
Add the butter and stir until the mixture comes together into a soft, slightly sticky dough.
Turn out onto a floured surface and gently roll into a circle about 1cm thick.
Cut into quarters and cook in a hot, buttered pan over medium heat for 3-4 minutes per side until golden and crisp.
Serve with fried eggs, smoked bacon, and spring onions—or with HP/ Brown Sauce as Gaga would have.
