Potato Farls
  1. Peel and chop the potatoes, then boil until soft (about 10-15 minutes). Drain well and mash until smooth.

  2. While still warm, mix in the flour, salt, pepper, and baking powder.

  3. Add the butter and stir until the mixture comes together into a soft, slightly sticky dough.

  4. Turn out onto a floured surface and gently roll into a circle about 1cm thick.

  5. Cut into quarters and cook in a hot, buttered pan over medium heat for 3-4 minutes per side until golden and crisp.

  6. Serve with fried eggs, smoked bacon, and spring onions—or with HP/ Brown Sauce as Gaga would have.
