Crispy Halloumi Fajitas With A Lime Chipotle Aioli

    Yoghurt sauce:

  1. Cut the halloumi into strips and carefully pat dry.

  2. Season the cornflakes with a tsp fajita seasoning.

  3. Roll each bit of halloumi into flour, gently rub around the halloumi. Dip in the egg making sure to really shake of excess before dipping into the cornflakes. You need to press into adhere to the halloumi do this carefully. Leave to one side.

  4. Fry off the red onion and peppers in the garlic over high heat until softened. Whilst they are softening, make the yoghurt sauce.

  5. Once you have done that, air fry the halloumi for 7-8 minutes on 180 degrees. If using an oven bake for 10 minutes at 190 degrees celsius.

  6. Once the peppers and onion have softened, add in a tsp fajita seasoning, a tbsp salsa and a tbsp water.

  7. In a seperate pan (optional but recommend), pan fry the tortillas high over heat for less than a minute each side (flip when bubbles form) for a crispier taco.

  8. Serve the tacos with the peppers and onions at the bottom, halloumi on top, drizzle over the yoghurt and coriander.
