Steakhouse-style Pork Chops
  1. Adjust rack to top position and preheat oven to 425 degrees.

  2. Wash and dry potatoes. Cut into 1-inch pieces.

  3. Cut broccoli florets into bite-size pieces.

  4. While veggies roast, pat pork dry with paper towels and season all over with steak spice.

  5. Heat a drizzle of olive oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 5-6 minutes per side.

  6. Heat a drizzle of olive oil in the same pan over medium heat. Add diced onion and cook, stirring, until softened and lightly browned, 3-4 minutes.

  7. Stir in stock concentrate and ½ cup water (for 4 servings). Bring to a simmer and cook until slightly reduced, 2-3 minutes.

  8. Remove from heat and stir in sour cream until combined. Season generously with pepper.

  9. Toss broccoli with lemon zest.

  10. Divide pork, potatoes, and broccoli between plates. Spoon pan sauce over the top.
