Add chia seeds to 250 ml water, whisk vigorously, cover and refrigerate
Stir chia mixture once after 10 minutes and again after 30 minutes to prevent clumping
While chia seeds are hydrating, steep tea herbs (lemon balm, hibiscus, rose hips, dried rose petals) in 750 ml water at 190°F for 8-10 minutes
Strain tea into a 1-liter bottle
Add honey, lime juice, and the chia water mixture to the bottle
Stir well and chill for 2+ hours
Serve in wine glasses or flutes, shaking or stirring the bottle before every pour to disperse the chia seeds
