Easy Salmon Meatballs
  1. Preheat oven to 350 F. (you can bake or fry these Salmon meatballs; your choice, but I love the fried one better)

  2. Place shredded leftover salmon in a medium-sized bowl. Add in carrots, garlic, parsley, cilantro panko bread/cornstarch, and mix.

  3. Add in beaten egg and continue mixing until completely incorporated.

  4. Add salt and pepper, depending on your liking.

  5. Form salmon into a ball.

  6. Heat oil in a medium size frying pan and brown all sides of the Salmon Meatballs. (Stop here if you are frying)

  7. Cover the cookie sheet with tin foil and grease with nonstick oil.

  8. Arrange salmon meatballs on a baking sheet and bake for 15-30 minutes or until the salmon is set.

  9. Serve salmon meatballs with ketchup or any sauce that you like. My clan like non-fat dressing. Enjoy!
