  1. Add 10-12 prawns to a bowl that have been deveined, peeled with just the tail left on

  2. Add 1 tsp Murray River Salt, 1 tsp rice wine vinegar, ½ tsp sesame oil, ½ tsp white pepper, ½ sliced red chilli, and 2-3 cloves minced garlic

  3. Mix well and allow to marinate in the fridge for 30 minutes

  4. Cut rice papers in half, then cut again into thirds

  5. Place a marinated prawn onto a strip of the rice paper and flatten it out

  6. Heat frying oil until hot, then carefully place the prawn crackers into the oil and fry for 2 minutes until the rice paper has puffed and the prawn is cooked

  7. Remove and strain over paper towels

  8. Serve with a final sprinkle of salt
