Mince 2 cloves of garlic and cut 2 green onions into small pieces, keeping stem and leafy parts separate
Cut ¼ onion into thin strips and prepare bean sprouts
Crack 3 eggs and beat them together
Mix 1 tbsp cornstarch with 2 tsp water to create a thick mixture, then add to eggs and mix evenly
Slice chicken breast and marinate with 1 tsp soy sauce, 2 tsp water, ⅛ tsp sugar, ¼ tsp baking soda, 1 tsp cornstarch, ⅛ tsp white pepper powder, and 1 tsp oil
Prepare a thinner cornstarch and water mixture (2 tsp cornstarch with 2 tbsp water) for the gravy
Heat oil in a pan over medium-high heat and add marinated chicken, spreading it out
Add green onion stems and pan fry both sides of chicken
When chicken is almost cooked, add garlic, onion strips, and bean sprouts to the pan
Stir fry until chicken is fully cooked, then remove everything from pan and add to the egg mixture
Season egg mixture with salt, white pepper powder, and leafy green onion parts, then mix evenly
Add more oil to the pan if needed and scoop egg foo young batter using a ladle
Pan fry until bottom is golden brown, then flip and fry the other side until golden brown
Remove egg foo young from pan
Pour unsalted chicken broth into the pan over medium-high heat and season with soy sauce and sugar
Bring chicken broth to a vigorous boil
Slowly pour the cornstarch and water mixture while stirring until gravy thickens
Add sesame oil as a final touch
Pour gravy over egg foo young and serve with rice
