Cook the bulgur wheat according to the package directions.
Cool and fluff the bulgur wheat.
Place the red onions into a bowl of cold water.
Let the onions sit in the water for 10 minutes.
Drain the onions.
Toss the bulgur, the red onions, the cucumbers, the parsley, the mint, the pistachios, the chickpeas, the lemon juice, the olive oil, the salt, the pepper, and ½ cup of the feta cheese.
Top each serving with the extra feta cheese and serve!
