Banana Bread Cookies
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

  3. Mix in the mashed banana, egg, and vanilla extract until well combined.

  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  6. If using, gently fold in the chopped nuts and/or chocolate chips.

  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes, or until the edges are lightly golden.

  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy warm or store in an airtight container for up to 3 days!
